In December, the Aubrac is also lived on the plate. As the days grow shorter and the cold settles over the plateau, food becomes a true refuge — generous dishes, regional recipes and comforting aromas drifting from the kitchen. At La Domerie, this season is the ideal moment to showcase local specialities and to give travellers — or future travellers — the desire to take a little of their stay home with them, by recreating these flavours in their own kitchen.
Good local, fresh produce
But the Aubrac is also beef raised on the pastures, artisan charcuterie, Laguiole cheeses, not to mention soups of heritage vegetables, farçous (savoury herb fritters) and a few festive desserts that elevate the territory's simple produce. At the dinners we can offer you, a winter menu might be built around a seasonal soup of local vegetables, followed by a regional dish such as aligot served with Aubrac beef, before ending on a comforting, indulgent dessert.
Our suggestion for your festive menu
For the festive season, pan-seared fresh foie gras with caramelised apples, served with a purée of green Puy lentils, makes an ideal opening. For the main course, a roast of venison coated in sauce grand veneur (a rich game sauce), with a fricassée of cep mushrooms and pommes dauphines, will delight your guests, before finishing on a baked Alaska flambéed in cognac — a sweet and spectacular note.
